Blueberry Ginger Gluten-Free Vegan Pancakes

I was reluctant to let this recipe go, but as any good cook knows, it isn’t the recipe that makes a good cook. It’s the passion and creativity that goes into the creation of each element. I hope you enjoy this recipe as much as I do, it’s the best pancake recipe I’ve come across, hands down.

Stuff you Need:

1 1/2 C Rice Flour

1/4 C Tapioca Flour

1/4 C Buckwheat Flour

1/2  C Applesauce

2 Tsps Guar gum or Psyllium husks

2 Tsps Baking Soda

2 Tsp Baking Powder

1/2 C Almond Milk or SoyMilk

1 Tsp Apple Cider Vinegar

1/2 C Blueberries

2 Tbs Fresh grated ginger

To Do:

– Combine Almond milk and apple cider vinegar. Let them curdle.

– Mix dry ingredients throughly in a bowl.

– Mix remaining ingredients.

– Lightly grease and heat a medium sized skillet on medium heat.

– Create Pancakes.

– Eat Pancakes.
