When our friend Chelsea came to visit and told us she was on a very specific diet – no oils, no grains, and no sugars, among other rules – I took it as a challenge. The eggplant rolls are inspired by something I’d seen at Granville Island Public Market. The eggplant is marinated and then lightly roasted. Inside is a chickpea spread delicately flavoured with fresh cilantro and lemongrass, and I made a sugar-free sweet chili sauce from scratch.

    This looks incredible…Ive been craving attempting to make it since I saw this photo the other day….the only issue is that Im in Spain right now and Im not sure I can find the lemon grass or even the cilanto (cilantro is not a big hit over here :(

    But also.. is the how -to part of the recipe on the site here somewhere? Im not a great cook and need specific instructions to even attempt something half as good as this….so any help would be greatly appreciated!! Thanks so much!!

    We made this so long ago that we can’t provide the recipe. Often we’ll make something and the recipe either won’t be perfect, or we’ll just have photos and will forget what we did, so we can’t post a recipe. Sorry.
