Even the most inept cook can assemble this cascade of summer flavours.
This is what you’ll need:
Dandelion or spinach greens
White Wine Vinegar
2 Cloves roasted Garlic
To make your dressing you dice 1 peach and throw it into the food processor with the garlic cloves, a little bit of olive oil, white wine vinegar, and white wine. Blend until smooth. Make sure you add a little of each ingredient at a time and find your perfect combination. Don’t add too much vinegar or else it might overpower the flavour of your delicious, local peach.
Take the remaining pear and peach, thinly slice each fruit so that you have enough for each salad you are assembling. You could use a mandolin if you wanted to get the fruit very very thin.
Place the fruit slices over the greens and put just enough dressing to give a bit of flavour. Top with roasted almonds (chopped), Spearmint or mint and you have yourself a fast, healthy summer salad to impress all of your friends with. Even your meat eating friends will be begging for more.
